Public bug reported:

As for now I only can choose between different applications from a list
to be opend with a filetype. (preferences->open with) Please bring back
the possibility to open with a commandline. This is neccessary for
applications not installed via package management - for example certain
wine applications.

What is this simplification-thing in gnome 3 anyway?!
