More specifically, it happens when a page visible on the display is no longer in the rewritten PDF file. This only happens when the number of pages in the document shrinks, and the currently visible page before the rewrite is after the end of the document after the rewrite. (Since errors in compilation may as a side-effect shorten the output PDF, this can show up when the latex compilation fails.)
eg If I remove pages 5-7 from a document 7 page document, recompile it while evince is running, and evince is currently displaying page 6, evince will crash. If evince is displaying page 3, it will not crash...
