Also these two messages suggest pauses at a low level that could block
other things:

May 7 17:27:40 reichelt-desktop nautilus[3278]: Called "net usershare
info" but it failed: Kindprozess »net« konnte nicht ausgeführt werden
(No such file or directory)

May 9 17:41:25 reichelt-desktop kernel: [ 1033.469201] perf: interrupt
took too long (2501 > 2500), lowering kernel.perf_event_max_sample_rate
to 79750

The second one in particular suggests the kernel is getting stuck. Maybe
keep an eye on the kernel log (dmesg -w) for more information.

Also try avoiding network filesystems/mounts for a while (in case you're
using those). Any problem in the network while doing so could cause such
pauses. Although admittedly a properly designed UI should ignore such
issues, I don't think gnome-shell is there yet.
