Thanks. The kernel is reporting only one official refresh rate for that
monitor:

So that's all you will see in Wayland sessions. To get more custom modes
you can try logging into 'Ubuntu on Xorg' instead. There is an
enhancement request being discussed to add the same to Wayland sessions:
