In GNOME 2.20 (Nevada builds 76 and later), it seems to be well hidden.
Bring up the Launch menu -> Preferences -> Appearance, choose the Theme
tab, then the Customize button, then the Pointer tab. What you see
there depends on whether your Xserver supports the Render extension
(Xorg, so most x86 users) or not (Xsun, so most SPARC & Sun Ray users).
Both seem to have a cursor size option, but different ones due to the
use of the Render extension's improved cursor handling if it's available.
