Your original issue was due to you not having libreoffice-pdfimport
installed. The LibreOffice debugging article
https://wiki.ubuntu.com/LibreOfficeBugWrangling has been updated to help
prevent this.

As per http://help.libreoffice.org/Common/Insert_OLE_Object you will not
be able to have a clickable icon, other than the actual document
embedded as an object, as you saw.

Wishlist as per

embed any file extension type, this should be split up into two different bug

Title:
  Cannot embed a file as an ole object

Status in “libreoffice” package in Ubuntu:
  Incomplete

Bug description:
  When I try to embed a pdf file, as an embedded document in libreoffice
  writer, it tries to import the pdf file as a text file, instead of
  just displaying a pdf icon that I can click to open.

  To reproduce the bug, 
  1- start libreoffice writer 3
  2- select from the menu "Insert>Object>OLE Object..."
  3- select the "Create from file" radio button
  4- click the "Search..." button
  5- select any pdf or other non plaintext, non libreoffice compatible, or 
binary document
  6- click the "OK" button

  Expected behaviour : an icon representing your document should be
  inserted. Clicking on the icon should open the document using the
  appropriate program.

  Observed behaviour : an "ASCII Filter Options" dialog is displayed.
  Clicking OK in that dialog will insert a frame containing the text
  from the pdf file (as if you just cat the pdf file).

  I am using Ubuntu linux v12.04 and libreoffice v3.5.4.2, but I think the bug 
has always existed, as I had the same problem before with openoffice.
