It looks like this is the intended, though unintuitive behavior. If I
right-click on the 'Red' channel and choose 'Duplicate Channel', it
creates a fifth channel named 'Red Channel Copy' which does get listed
in the 'Add Layer Mask' window.
My understanding now is that the 'Red' channel is not actually a
channel, despite being called one.

In the 'Add Layer Mask' dialog box, the drop-down box for selecting
which channel to use is grayed out. If I choose the 'Channel' option
and click the 'Add' button anyway, I get the message "Please select a
channel first."
