Addendum to this workaround: It breaks the gnome-cards-data package. This cannot be installed due to broken dependencies after the workaround has been implemented. The workaround for this would be: Manually download the gnome-cards-data package from packages.ubuntu.com and (as root) copy the .svg files from the CONTENTS/usr/share/aisleriot/cards directory into the directory /usr/share/aisleriot/cards on your hard drive. mc (Midnight Commander) works fine for copying the content out of a .deb package.

Since the update, this option is missing, only offering me a chance to undo, restart or start a new game. I would like the shuffle option reinstated / shuffle being a permanent option on the toolbar.
