AMD has just released HDMI audio documentation and the upstream ALSA developers have written patches which successfully enable multichannel audio over HDMI on AMD hardware. This feature will be available in the upstream 3.13 kernel. A PPA of this kernel will eventually be available at http://kernel.ubuntu.com/~kernel-ppa/mainline/ and instructions on how to install and uninstall it are available at https://wiki.ubuntu.com/Kernel/MainlineBuilds
Note that the final 3.12 kernel is not released yet.
