Good(ish) news: 
It seems that this bug has been fixed in versions 3.6 and later of nautilus 
(see below). Ubuntu LTS  users (like me) are currently on 3.4. It would be good 
if ubuntu pushed an update that upgraded the nautilus version. Otherwise I 
guess we wait until April 2014....

This particular bug has already been reported into our bug tracking system, but
we are happy to tell you that the problem has already been fixed. It should be
solved in version 3.6 and later.

Bug description:
  This bug can be reproduced by selecting a directory with a large
  number of files occupying significant disk space (e.g. > 1GB). Right
  click the directory in nautilus and select properties.

  Expected behaviour: In the "Contents" field of the "properties" dialog
  box nautilus should display the correct number of files in the
  directory and sub-directories and the disk space used   (e.g. "67,292
  items, totalling 10.3 GB"). Or nautilus should indicate that this
  information is unknown and/or being computed.

  Actual behaviour: nautilus displays incorrect values for the number of
  items and disk space (always an underestimate), which periodically
  update (increase) until the correct values are reached. Between
  updates there is no indication that the values are still being
  computed or that the currently displayed values are wrong.
