For the most part this is an Unity issue, not an LibreOffice one as the icons 
are more important for unity and its consistency (e.g. also for icons already 
started and in the dash). Please leave this as "incomplete" or even expired in 
"Libreoffice (Ubuntu)" as long as there is no dicision from Unity and its team.
Alternatively open a bug as per http://wiki.documentfoundation.org/BugReport 
and add it via "Also affects project" and discuss the issue upstream.

Bug description:
  Instead of having three separate icons for writer, calc and
  presentation in launcher there could be one icon that starts
  libreoffice with its start screen. Then the user can choose which
  application to start.
