The issue has been fixed upstream (by updating the documentation) and in
Ubuntu trusty (by adding a menu back under Unity)

Bug description:
  Document Viewer doesn't have any menus, they've migrated to its Gear
  icon.

  But the help for it, I think /usr/share/help/C/evince/ , is full of
  references to Click File ▸ Print. These are all completely incorrect
  in Ubuntu, there's no File menu.

  (And the Unity HUD doesn't find any of the commands in the gear menu,
  so printing a PDF is sad times, but I digress)
