I finally got ibus-pinyin working correctly: the following steps are all 
necessary and must be performed in order.
1: remove pinyin from the list of available engines
2: run the command: dconf reset -f /desktop/ibus/
3: reboot the computer
4: re-enable ibus-pinyin.

  Installed language support, ibus, and added Chinese(Pinyin) through
  the "Text Entry Settings".

  When typing in "pinyin" the Chinese characters produced do not
  correspond to what was typed in pinyin. Instead it looks like the
  keyboard is following the bopomofo or zhuyin method.
