The issue is fixed in the current version of GNOME in Oneiric, closing
the bug

Bug description:
After installing the package "thunderbird" (and not the transitional
package "mozilla-thunderbird"), the preferred applications dialog
shows two options for the preferred mail client: "Thunderbird" and
"Mozilla Thunderbird". The latter entry should not be present.
