We need more information like what version of Ubuntu and which printer driver
you are using, therefore please run the following command in a terminal:
apport-collect -p cups 1067510
Also we need your cups error_log after trying to print as described here:

Can't set printer to monochrome
Status in “system-config-printer” package in Ubuntu:
Incomplete
Bug description:
I can't tell my Canon MP270 to print in monochrome.
I go into Printing-localhost, right click for Properties, then Job Options,
scroll down to print-color-mode, and choose monochrome.
But when I click Apply it reverts to color
This is the only approach I have as the gui Printui-MP270 my stepson
installed for me does not open.
I don't want to be forced back to Windows just to use my printer.
