I have the same phenomena upon installation of Inkscape.
This is what I did:
1. click .ai file and said from nautilus that "You need to install application 
to open this file".
2. Showed two applications. I chose Inkscape.
3. Installation started. Affiliated packages as well.

After I tried to open inkscape, I found the following message.

inkscape: symbol lookup error: /usr/lib/x86_64-linux-
gnu/libgiomm-2.4.so.1: undefined symbol: _ZN4Glib11VariantTypeD1Ev

  Inkscape doesn't open ubuntu 16.04 libgiomm-2.4.so.1

Bug description:
  I am using ubuntu 16.04. However, my inkscape doesn't open. It isn't
  always like this.

  When I have been tried to open it from terminal I have been received
  this massage:

  inkscape: symbol lookup error: /usr/lib/x86_64-linux-
  gnu/libgiomm-2.4.so.1: undefined symbol: _ZN4Glib11VariantTypeD1Ev

  
  I have reinstalled libglibmm-2.4-1v5 but it doesn't work.

  So, I don't know what I need to do to have inkscape working in my
  computer again.
