This is the designed behaviour of GNOME Software - it only shows
applications, not all the packages that make up Ubuntu.

  Some packages aren't listed in the search output

Status in gnome-software package in Ubuntu:
  Invalid

Bug description:
  The package 'texlive-latex-extra' isn't listed in 'Ubuntu Software' GUI.
  Searching for that package in that GUI didn't come up with the package.

  The command:
   apt-get install --simulate texlive-latex-extra
  Finds that package and successfully simulates an installation.
