By default, gedit uses the 'classic' color scheme. I think the 'builder'
color scheme looks a bit closer to Ubuntu's colors. (grey, orange,
green, and blue instead of blue, green, red, and purple). It's also nice
because it has a Dark variant and it is the same color scheme used by
default in GNOME Builder.
You can change the color scheme by opening gedit. I recommend opening a
typical source code file. Click the app menu in the top bar and select
Preferences. Switch to the Fonts & Colors tab. Select the Color Scheme
you want.
The gsettings is
[org.gnome.gedit.preferences.editor scheme]

We are now past Ubuntu 17.10 User Interface Freeze, but I think this
change is worth considering for 18.04 LTS.
