My turn to apologize for late reply. :)

I think we'd better wait with this till the beginning of the 18.04
cycle, so we have time for testing and possible modifications.

In the meantime, and if you like, you could help to test a possible
solution right now. My belief is that the only thing needed is to remove
the fonts-takao-* packages without any need for specific Japanese
configuration.

So what I ask you to do is running these commands on a 17.10 machine:

sudo apt purge fonts-takao-*
sudo apt install fonts-noto-cjk-extra

   Importance: Undecided => Wishlist

    Milestone: None => ubuntu-18.04

  Switch to Noto Sans as default font for Japanese and/or Korean?

Status in language-selector package in Ubuntu:
  Confirmed

Bug description:
  In Ubuntu 16.04 Noto Sans CJK is the default font for rendering
  Chinese. After having struggled with a few issues, I believe that we
  finally achieved the desired improvement of the rendering experience.

  So now I ask: Is there an interest from Japanese and Korean users to
  consider a switch to Noto Sans? (The fonts are already installed for
  all users on Ubuntu 16.04.)
