Changing Preferred Applications is now done via the System Info panel in
System Settings.

You might be interested in bug 890143 which complains about the location
being hidden.

  Preferred application not available in System settings

Status in “gnome-control-center” package in Ubuntu:
  Invalid

Bug description:
  In the previous Ubuntu version, the gnome control center contains a
  Preferred application section from where the default web browser and
  email client could be selected.

  In the latest Ubuntu verion, I can not find this section and I can not
  find any option for switching from Thunderbird to Evolution as the
  default email client.
