I have several web pages using header similar to these:

"http://www.w3.org/TR/xhtml1/DTD/xhtml1-strict.dtd";>
<html xmlns="http://www.w3.org/1999/xhtml"; xml:lang="fr">

<title>...</title>
In FF 5 on Linux the é è à and other UTF encoded caracters are not properly
displayed client side (the usual garbage...), this issue does not appear with
any other browser tested on Linux, Windows and MacOS. Even FF5 on Windows works
properly with the same data.
I went the ugly side and added a meta which fixed the issue on Linux
