I should have guessed this was gnome-shell, since that provides the GUI, not GDM... After the crash the purple login screen shows and all open programs have been terminated (and unsaved data is lost). dmesg reveals that the issue is related to the "Ubuntu Software" Snap application in conjunction with apparmor. Probably the issue occurs when Ubuntu Software app is checking for updates in the background - hence it occurs without user interaction.
