It sounds like chromium was updated while an instance was still running, and
this is a scenario known to create font cache corruption.
I would advise to enable the refresh app awareness setting, as documented here:

Bug description:
When I run chromium, I am getting a weird font in the browser.
Sometimes if you refresh the page, the weirdness might go away. If I
run chromium from the command line, I see the following:
(chrome:1089093): Gtk-WARNING **: 11:50:41.068: Theme parsing error:
gtk.css:1555:23: 'font-feature-settings' is not a valid property name
I also don't know which version I am running. I am trying to run the
stable snap channel but I had the beta channel installed.
`chromium --version` gives:
Chromium 87.0.4280.141 snap
but the about dialog box shows:
Version 88.0.4324.41 (Official Build) snap (64-bit)
As you can see in the screenshot, the font issue affects the developer
tools as well, so it is not just a problem with a specific web page.
