The bluetooth drivers that come with Ubuntu have very poor audio quality
which are not suitable for playing music.

Apparently thousands of people on stackoverflow have the exact same problem:

A2DP was not an option for the WH-1000XM4 bluetooth headphones, so the
first upvoted answer should absolutely be the default for people who
have A2DP - but that won't fix this exact ticket.

Sony devices and other high end Bluetooth audio devices would greatly benefit 
from having pulse audio installed and enabled by default:

If `pulseaudio pulseaudio-utils pavucontrol pulseaudio-module-bluetooth` 
packages are added to the default desktop and A2DP is enabled then the average 
desktop user will be happy with wonderful crisp audio in line with osx and 
windows.
