Thanks for pointing me to bug #1999308, which does indeed seem to be the
same problem. Unfortunaately I haven't had the time to apply the
suggested workarounds yet.

Yes, unattended upgrades seems to be enabled. Here's the log from the last time
Thunderbird was replaced.

Title:
thunderbird from mozilla ppa repeatedly replaced by snap

Status in thunderbird package in Ubuntu:
  New

Bug description:
I have thunderbird installed from the mozilla ppa.

For some reason it gets automatically replaced by the thunderbird stub
from ubuntu ppa, and the thunderbird snap package is being installed.

Happened like 5 times already since I'm on 24.04.

I "fix" it by removing the snap package and
sudo apt remove -y thunderbird && sudo apt install -y thunderbird

  /etc/apt/sources.list.d/mozillateam-ubuntu-ppa-noble.sources:

  Types: deb
  URIs: https://ppa.launchpadcontent.net/mozillateam/ppa/ubuntu/
  Suites: noble
  Components: main
  Signed-By:
   -----BEGIN PGP PUBLIC KEY BLOCK-----
   .
   mI0ESXMwOwEEAL7UP143coSax/7/8UdgD+WjIoIxzqhkTeoGOyw/r2DlRCBPFAOH
  [...]

  /etc/apt/preferences.d/mozillateamppa:

  Package: thunderbird*
  Pin: release o=LP-PPA-mozillateam
  Pin-Priority: 1001

Please stop replacing the thunderbird package with the snap version.
