it is not only related to gnome-control-center, nautilus too if you try to use 
the 'Send to...' function will give the problem
if evolution is no more the default mail reader, all bindings to the data 
server must be removed/disabled

  == Steps to reproduce ==
  1) Run sudo apt-get remove evolution-data-server
  2) Now run gnome-about-me

  == What happens ==
  gnome-about-me doesn't open and fails with the error:

  (gnome-about-me:3957): libebook-WARNING **: e-book.c:2229: cannot
  activate book: Failed to execute program /usr/lib/evolution/e
  -addressbook-factory: Success

  * gnome-control-center should depend on evolution-data-server

  OR

  * the part of gnome-about-me that needs evolution-data-server should
  not show if evolution-data-server is not installed, so gnome-about-me
  should run as normal. gnome-control center would then needs a Suggests
  (or similar) on evolution-data-server
