As a workaround for the problems accessing files on shares mounted under
~/.gvfs I created a symlink to .gvfs (with ln -s .gvfs gvfs-mounts). Now
saving/opening works fine ( on ubuntu 11.10, LibreOffice 3.4.4 ,OOO340m1
(Build:402)). It seems part of the problem was the inability to use a
path with a "hidden" directory.

  You need a mounted network share

  Create a new document (with writer or Calc).
  Click 'Save', click on your network share, click 'Save'

  LibreOffice ask for a login/password to save on your allready mounted
  share!!!
