Sphinx actually seems really straightforward to use... See [this 
example|https://github.com/cmusphinx/sphinx4/blob/master/sphinx4-samples/src/main/java/edu/cmu/sphinx/demo/transcriber/TranscriberDemo.java]
 and the dependencies described 
[here|http://cmusphinx.sourceforge.net/wiki/tutorialsphinx4]. Unfortunately, 
they have it set up as a SNAPSHOT dependency. It doesn't seem available on 
Maven Central. We could reach out to see if they're interested in uploading it.
