There is no official way to do this, but you can try to hack around this:

(This is not supported, you might break things. Keep a backup, etc. :))

The Firefox OS Simulator brings its own profile and settings with it.
You will have to modify them by hand:

1 - Navigate to your Firefox profile folder (e.g.
~/.mozilla/somethingrandom.default/) and then
extensions/[email protected]/profile/

2- The file user.js contains all settings (like you would know from
about:config).

3- Try adding proxy settings here.
