The difference is bug https://bugzilla.mozilla.org/show_bug.cgi?id=823640. There is no ISP database entry for office365.com, but Thunderbird guesses the domain "mail.office365.com" and attempts to connect to it in the hopes there is something there. And there is, so it works.
This is an enhancement we should definitely implement, as it's fairly easy. (Looking up DNS SRV records is a different one and harder because it requires serious platform enhancements, although I'm not seeing any SRV records for office365.com anyways.)
