Wish I could. It says the App Manager needs Firefox OS 1.2 and I'm still

there any safe updates?

None that I know of, there's a few tutorials around but they all involve a certain amount of risk. An alternative would be to use the emulator (not the simulator): it requires a full build which will take some patience (and a lot of disk space) but it will give you an environment that works exactly like a phone and it will be compatible with any of our branches including master and 1.2.

I'm considering buying a Firefox OS phone from Poland that has 1.1 on
it, but will I be able to update it to 1.2?

I think the same restrictions that you have on your device apply to the Polish version too. The best course of action if you don't want to risk bricking your phone is to wait for ZTE's official update.

Lately I've noticed that when I use the Simulator as an add-on with
Firefox 26, I get a lot of crashes. All is fine if I don't have any
add-ons enabled.

If you can reproduce the problems w/o add-ons installed please file a bug; we would like the simulator to be an effective environment for developers. I would encourage you to file bugs on Bugzilla (or follow existing ones) for any issues you encounter or any missing/incomplete features. The development tools are getting better by the day IMHO but there's always room for improvement.

BTW I am not sure how the simulator interacts with add-ons so you might try turning them on one by one to identify which one is causing problems and possibly report it to its author.
