There are various Gaia make options that control such things:

https://developer.mozilla.org/en-US/Firefox_OS/Platform/Gaia/Hacking#Make_options

If you make a different Gaia profile and then reflash it to your phone, you 
should be able to get rid of the test apps (PRODUCTION=1 make does it, I think.)
