Sure :) The Stack ships Apache, MySQL, PHP, OXID eShop and their dependencies. It is self-contained and independent of your system so can install several stacks in different folders for testing.
We also support to install modules on top of the existing stacks. For example, you can download the BitNami WordPress module and install on top of your OXID eSales stack. My understanding is that you want to share the servers (MySQL, Apache) and install several OXID eSales apps on top of them. That is not possible currently but we will work on that.
