It would appear that since ehcache 2.6, caches aren't persisted after a restart.
I'm pretty sure I tested for this, but the documentation tells me differently:
http://ehcache.org/documentation/configuration/fast-restart
It should be doable to verify this with a unit test, provided that ehcache doesn't keep stuff in memory after we explicitly shut it down.
