Yea that is the current behavior but really should be changed. In addition to the privacy reasons you state, the From address is essentially "forged" so can be flagged as spam etc.
On the implementation I work on, we have a custom prefs provider, extending LocalUserPreferencesProvider. It overrides get_pref() and if the pref is 'email_address' it returns a custom value. This is kind of tricky and may have some other side effects, but is a workaround option for now.
