yes, it is planned to provide ant scripts for the SDK examples. Do you work with the OO2.0 SDK? If yes, take a closer look in one of the example application jars. All application jars contain the bootstrap "glue code" class files (<sdk>/classes/*). The applications will automatically start an office and connect over a named pipe connection to the office.
You can simply extend your ant script and pack this "glue code" classes (and dll -> for platform independency) to your client application jar.

I didn't even bother looking at the Makefile's because there just not natural for a java developer (I haven't used makefiles since I developed in C 6+ years ago). I ended up just extracting the generated jar's to figure out what was required.

Your approach should work (as long as you use those jars in
compliance with their license, which shouldn't be much of a problem for LGPL),
as we try to keep UNO backward compatible. (You won't benefit from
any improvements, of course.)
However, a simple solution to locate and connect to an OOo instance
is now available as "Simple Bootstrap," check out
