I would develop an application, which is able to manage a new document
type, on the same level as Writer, Calc, etc... using the same GUI UNO
component (com.sun.star.... ).

The answer to this questions depends on what exactly you have in mind.
The term "service" can mean a lot of different things in OOo.
So, to get a start, do you want to implement a new document type that is
integrated into OOo on the same level as Writer, Calc etc. (integration
into File-New and File-Open etc.)?
Or do you want to provide a component that works on top of the documents
of OOo and should integrate with the GUI of them (menus, toolbars etc.)?
