Summary: Rename plugin hook names

ATLAS-987 introduced shims for each hook so that the classloader for hooks is
isloated. But the hook package and name in both shim and actual plugin is same,
which is confusing. Rename the plugin hook name as it doesn't require any
changes in hook configuration. For example, falcon-bridge/AtlasService
