I agree: we answer this question all the time: {{"default"}} is used during
schema evolution, to provide a value when a new field appears in the schema,
and it is not related to encoding and decoding.
(It doesn't help that GenericRecordBuilder _also_ uses it for convenience when
the user omits setting a value in the Java world!)
