I am not sure!
We want to build with the newest JDKs to make sure that Avro compiles and
works on them.
The interop tests are about making sure the produced `.avro` files could be
read by the other SDKs. The Java (bytecode) version does not really matter.
We will just make the CI build longer.
I don't mind doing this change if others think it is beneficial!
