Laurent Godard, the Project Lead for the OOo Extensions project mentioned that 
you can use user-fields to allow you to define document metadata. The OOo 
document properties panel, File->Properties->Tab='User Defined' only has four 
user defined fields and some people have found this to be completely 
inadequate.

Laurent is a developer of an interesting OOo addon application that 
demonstrates this -

"Ooo2Dbk is a converter of OpenOffice.org documents to DocBook articles or 
books. 
This export allows to use the popular DocBook format as a pivot to archive the 
content and transform it to other formats such as HTML or PDF, by using well 
defined filters.
The DocBook reference is available at http://docbook.org/tdg/en/html/ 
Ooo2Dbk has been developed by InDesko for the CNCC and the French Ministry of 
Equipment.

It uses user defined fields to store the metadata, has a nice GUI panel to 
access the data, and has a DocBook XML V4.4 converter."

The metadata fields have been developed for French Government use but could 
clearly be adapted for academic use.

Note the documentation has not been updated for OOo version 2 but it seems to 
work. To install the add-on package you can use the tools->Package Manager to 
add the file Addon_Indesko_OOo2Dbk.zip in the ooo2dbk-1.5.0-1.tgz file 
mentioned below. It installs the code and the Indesko item on the menu to get 
the GUI panel.
