This seems to be fixed now. I deployed the app below, and confirmed that
persisted state included this enricher (and the default enrichers that an app
has):

- type: org.apache.brooklyn.entity.stock.BasicApplication
brooklyn.enrichers:
- type: org.apache.brooklyn.enricher.stock.Transformer
brooklyn.config:
enricher.triggerSensors: myTrigger
enricher.targetSensor: myTarget
enricher.targetValue: myVal

I then called {{stop}} on the app, and checked the persisted state. The
enrichers had also been deleted.
I also deployed the app again, and called {{unmanage}}. Again, the enrichers
were also deleted.
