The openjdk:8-jre-alpine Docker image used to build the calcite-avatica docker
image has been removed and is no longer available. This is causing Docker image
builds to fail.
We need to switch to a supported Docker base image for OpenJDK, such as the
eclipse-temurin image: https://hub.docker.com/_/eclipse-temurin
