DefaultExchangeHolder should skip any Camel specific header/property

The DefaultExchangeHolder which can serialize the Exchange should not include
any Camel specific headers/properties as they are not to be transferred over
the wire etc.

Likewise the safe serializable check should check collection/map as they can
contain now serializable objects.
