Well, it would be a full-time job for _every_ project to go and list the help they need. We have what - "just" a couple hundreds of the projects? Or and there's "How to Contribute" page on virtually all of them. If you aren't sure what project you want to join or how to contribute to one you already know about - there's also Google search.
