Unfortunately, I don't know much about GSOC. But you can select any project
you like.

Projects sorted by language can be found here:

and by topic here: https://projects.apache.org/projects.html?category
That might help you to narrow down the options.

Once you select a project you interested to contribute to, you can contact
with contributors (developers) there. If you need help getting introduced
to the project community, please don't hesitate to ask.

Usually, a project has a guide on how to contribute and provides a list of
easy tickets to start with. Probably I will be able to help with guiding
you in that project.
