You can use the logging feature to log all details of the calls: http://www.liquid-reality.de/display/liquid/2015/06/08/Enterprise+ready+request+logging+with+CXF+3.1.0+and+elastic+search
By configuring the log format you should be able to retireve the same details as in the jetty case. When running as servlet you can of course use the plain jetty logging too.
