Sure enough. Hadn't occurred to me, given that the problem was present in completely different environments, with different versions of the driver, but apparently they were careful to replicate the bugs across operating systems and driver versions. I upgraded the ODBC drivers to the latest version, and all the problems I reported are gone. Now I'll see if I can goad the Ubuntu maintainer to pick up the upstream bug fix, so I don't have all my machines working outside the package management system.

I have not found an ODBC driver version provided by MySQL thus far that does not have some form of functional limitation when working with OOo. I can only hope that things will improve now that both products have developers under the same mothership roof :-))
