connectivity, maintenance, other services interrupting, server used for
other services, ..?

What can we do for a better availability? A automatic switching to a
backup-host?
Any suggestions?

I absolutely agree that the situation is not desirable. I also hope we can get some redundancy, e.g. by either DNS round-robin entries, or by some quick-and-easy manual switchover from one machine to another in case the system goes down.

At the moment, Stefan (who knows our infrastructure best) is on vacation, but I hope that together we can find a solution.
