Currently the flinkVersion is a string field that we do not use anywhere. There
might be some cases in the future where knowing the flink version might be
valuable but an optional string field will not work.
We should either make this a required enum of the supported flink versions (I
suggest only major.minor -> 1.14, 1.15...) or remove it completely for now.
